My version of a yellow chicken Thai curry. It has more spices than a typical yellow curry.

3-4tbsfried shallot
4wholelemongrass (stalk)
6leaveskaffir lime leaves
1tspsea salt
2tbspalm sugar / jaggery
1.5tbsfish sauce
1tbslime juice
