
Date and Walnut Loaf

This rich and moist date and walnut loaf combines the natural sweetness of dates with the nutty flavor of walnuts. The result is a deliciously comforting bread that’s perfect for breakfast or as a snack.
Directions
- Preheat your oven to 175°C and grease a standard loaf pan (roughly 23x13 cm).
- Soak the dates: Place the chopped dates in a bowl. Pour the boiling water and baking soda over them. Stir and let the mixture cool for 10 minutes.
- Mix wet ingredients: In a separate large bowl, beat the softened butter and brown sugar together. Add the egg and mix well.
- Combine dry ingredients: In another bowl, sift together the flour, baking powder, and salt.
- Bring it together: Stir the cooled date mixture into the butter and sugar. Gently fold in the flour mixture until just combined, then stir in the chopped walnuts.
- Bake: Pour the batter into your prepared loaf pan. Bake for 40 to 50 minutes, or until a skewer inserted into the center comes out clean.
- Cool and serve: Let it cool in the pan for a few minutes before moving it to a wire rack. Slice and serve plain or spread with butter.
